Review: Round Barn Distilling’s Watchman Barrel Strength Bourbon
Watchman Barrel Strength Bourbon is the first of four 2026 releases from Round Barn Distilling. Dedicated to the lighthouses of the Michigan coastline, Watchman Barrel Strength Bourbon is a mahogany colored 116.2 proof powerhouse that despite its intensity, lends itself to sipping and savoring the craft that went into it. That’s no easy feat, given the intensity of alcohol in the glass and is a testament to the skill in blending the barrels devoted to this 804 bottle release.
Because of its high proof, Watchman lends itself to a rocks glass rather than a Glencairn glass, which tends to focus its substantial alcohol to excess, but “rocks” should be used sparingly lest the chill mask the rich flavors and aromas of the whiskey, which is a superb example of the blender’s art. The 60% corn, 36% rye, 4% malted barley mix leans into the spiciness of the rye while its strong caramel base cushions the landing of the alcohol bite on the palate. The vanillin from the barrels harmonizes the two resulting in a very rich, but intense, sip. It rewards the careful drinker, but if you don’t treat it with respect, you’re likely to find yourself gasping from the heat it can bring.
A gentle swirl produces long legs down the sides of the glass and a rich creamy surge of that burnt sugar note well beyond the rim. Its texture is viscous, almost slick on the tongue. Accordingly, the mouthfeel is full, clinging to the palate while the alcohol springs into vapor with a heady rush into the sinuses. That alcohol burst is deeply tied into the toast from the barrel, with strains of oak and char running beneath its sweetness as it spreads through the mouth. There’s a lingering note of cocoa powder and dark brown sugar once the fire has faded, and and echo of allspice, bringing to mind homemade cookies. The potent aroma wafts up, reminding you to come back for another sip and it mellows into an almost praline richness a few inches above the glass. Don’t leave it sitting too long or tears will form, slowly beading up and dropping back as the alcohol vaporizes, revealing notes of dark fruits and allowing the spirit to mellow ever so slightly.
Ice will fight the fire, but also remove a bit of the magic. A single cube will yield more of a molasses cookie aroma and significantly mute the alcohol’s heat while dialing up the barrel’s presence. Indeed, if you’re a fan of oak character this is how you’d want to savor Watchman. The alcohol is now more well behaved and easier on the palate, but at the expense of the more vivid flavors when sipped straight. There are wisps of black cherry and dates in the aftertaste now that were previously lost in the fire. The power remains, but only hints at its true intensity.
Starting with such a powerful and rich offering certainly makes the prospect of three more equally (if not more) interesting bourbons a mouthwatering proposition. If you have the opportunity to lay hands on this distinctive barrel strength bourbon, you will not be disappointed.
